Crispy Salt & Pepper Prawns

Hi all, I learn this very simple salt and pepper prawn from one of my friend JIAYUAN.
As you know, I love seafood especially prawnss
Whatever to go with prawns, I love them so much!
This is a very easy to make prawn dish, but it requires some deep frying before go to stir fry.
3 of the main ingredients for stir:
spring onion/shallot
garlic
 red chilli
Chop the garlic and chilli, and slice the spring onion then set aside for later use.
For the prawn, I put in some seasoning like salt and pepper before I coat them
with the egg and flour so that it has some taste.
Then I coat them with egg followed by flour (I mix in with some corn flour)
then deep fry them in a pot of hot oil at 165 degree celcius for 5-7 minutes
or until golden brown.

The picture above is how the prawns look like after deep frying.
Then in a hot pan with some oil, stir fry the rest of the ingredients for 2 minutes
or until the aroma comes out, add in the prawns and keep on tossing until
they are well combine.
Lastly, add in some salt and pepper for taste then it is ready for serve.

Garlic & Thyme Herb Prawns

Owh, tonight's diner!
I got this recipe from DONNA HAY magazine.
Very easy and simple to make this :)
When come to prawn, I always wanted to try something different and new.
A squeeze of lemon juice ^^



For 25 pieces of prawns :
In a baking tray, put some olive and around 3 tsp of minced garlic.
Roast it in the oven at 180 degree celcius for few minutes.
Remember to cover the tray with aluminium foil or else
it will sparks the oil everywhere.
Or you can also simply fry the garlic on a pan for few minutes.
Then mix the garlic and oil with around 90g of butter + 2 tsp of dried chilli+
+salt and pepper+ pinch of sugar+ thyme herbs.
The actual recipe actually using tarragon herbs, but I couldn't
find it in safeway so I replace its with thyme herbs instead
which gives out citrus flavoue :)

Then on the same pan, dont wipe off any excess oil.
Place the prawn on the tray, brush over the sauce evenly.
I also put on extra salt & pepper as well as the thyme leaves.
Bake in for 5-8 minutes or until its cooked properly :)
Serve them while its still hot!

Seafood Skewers

Very simple cooking meal with only few ingredients and you can have hotel style dinner at home!
These skewers goes with fresh cucumber with some lemon juice as well as sambal for dipping!
And guess what, you can have any seafood you like on your skewers!
I have chose prawn (my favourite), squid and salmon, plus some onion for some veggie sweetness!
I only sprinkle on some salt and pepper, thats it!
It is so simple, you don't need to have complicated seasoning on you seafood, 

just some salt and pepper will do!
would make them fantastic as seafood themselves has their own natural sweetness!
Once you get your ingredients ready, just have some fun by getting them on the stick in the way that you like ^^
Then, just grill them on a hot pan with oil until they are cooked!

Bit of lemon juice make these skewers so appetising, with some fresh cucumber a side you just can't stop eating :)
Plus some mild spicy sambal, this will definitely add more flavours to your skewers if you want something taste different and exciting!

Crispy Prawn Balls stuffed with Mozzarella Cheese

I got this idea of deep frying the prawn ball that coated with bread crumbs,
but with only prawn it looks too simple.
So I decided to add something that everyone love > MOZARRELLA CHEEZZ
With some lemon juice that squeezed on the top, this little prawn balls
become so appetising that you would not even care its a deep fried stuff!

Look at the cheese that melting all the way in the middle of the ball!

And of course, I will provide the recipe with no exact amount of ingredients ok?
Everything is measured according to feeling!
Ingredients:
Minced prawn
Flour (ratio is around 1/5-1/4 to the quantity of the prawn)
Bread crumb
Parsley Flakes
Mozzarella Cheese
Lemon
Eggs
Salt, Pepper and Sugar to taste

You can either mince up your prawn with knife or using chopper/ food processor.
Once you done with the mincing, mix it with flour.
If you want more prawn taste, do not put too much flour,
if this doesn't matter to you, you can add more flour.


Then add in salt & pepper (adequate amount) and a teaspoon sugar.
(You have to do this step according to your feel because I don't really measure the amount of seasoning that I put in)
Mix them all together then add in an egg white and mix until well combined.

Then, work on the cheese.
I roll them into a ball so that its easier to stuff it into the prawn meat later
and they won't come off or spreads everywhere.

Next step, you can start doing the ball by stuffing the cheese in the middle.
You might find that the prawn meat is a bit soft to work with,
but its ok as long as you get the cheese covered with the meat properly with no leak
and just shape it into a ball shape (it doesn't have to be too round, try to accept a little bit of imperfection).


Mix the bread crumb with around a teaspoon of dried parsley flakes and salt,
just to give some colour and taste to the outer layer.
Then, roll the ball along the bread crumb and deep fry it in a pot of hot oil at 160 degree Celsius.
The prawn ball is ready in around 6-8 minutes when it is golden brown in colour.

Serve it immediately and you will see the melting cheese coming out when you tear the ball apart!
Squeeze on some lemon juice and you will be addicted to these, just very simple ingredients
and making steps you can have a very nice meal at home, how nice is it huh??

Super Refreshing Combination Thai & Viet Style Prawns Cold Vermicelli Salad with Spicy and Sour Sauce

Today I want to make cold salad in asian style,
straight away I think of thai prawn salad with the mango.
With leftover cooked vermicelli in the fridge,
I think I got everything I need in making this refreshing dish.
Vermicelli on the bottom with mango slice, shredded cucumber, pineapple, red inion and crushed peanuts!
The fruits and veggies around would make this dish more crunchy and refreshing.
The mango and pineapple give out sweet and sour taste which just match with the flavour of the sauce.
Prawn has its own sweetness which is fine without any seasoning,
just cook it it boiled water would do.
Peanuts gives out more flavour and eating texture to this salad as it tastes more crunchy,
it is a MUST in this dish!!

For the sauce, I use some fresh chilli, lemon juice, fish sauce, sugar syrup and combines all of them together.
You can add some salt if you want to but fish sauce itself taste salty so you can ignore if you want to.
Chilli gives out spiciness while lemon juice make the sauce taste more appetising!

There you go, pour on the sauce and your meal is ready to go!

Deep Fried Crispy Prawns with Mayonnaise

Normally, people use flour to coat the prawns when they deep fry it, but I am using
bread crumbs just to get more crispy and thicker skin at the surface :)
I seldom do deep frying at home as it consumes lots of oil and lots of cleaning.
My hubby is craving for the prawns, keep looking at the prawns when I am deep frying it :)
I am choosing the prawn cutlets from Woolworth.

The Crumbing process and sequences :
Corn flour/plain flour >>> Eggwash >>> Breadcrumb

They are ready to be deep-fried!

Stir Fry Veggies and Prawn Cutlets with Oyster and Garlic Sauce

Still, on diet. Gonna have veggies but want to get some meat as well.
Simple mix vegetables and seafood, you can choose you favourite vegetables and seafood.
Well, I am having prawns again ^^

Snow peas, Mushroom, carrot and mini corn.
I got prawn cutlets from Woolworth.

Wash and season them with some salt and pepper, add some soy sauce.
This is what I do whenever I got meat in my dish.
Just simply some salt and pepper would add the taste.

I stir fry the veggies first, as carrot need longer cooking time.
Put in some oyster sauce and water (almost cover the veggies), wait until it boils.

Then add in the prawns, stir to combines.
I simmer it with a pot cover for around 5 minutes, Just to reduce the sauce a bit and cook the dish to more tender state.
Put in some seasonings like salt/pepper/sugar just to add some taste.
LASTLY,  I thicken the sauce with some corn flour water.
Then, dinner is ready!

Thai style Stir Fry Bean Sprouts with Prawns

The delicious veggies and seafood for tonight's dinner ^^
Basic ingredients:
garlic, shallot,prawns(marinate with pepper and soy sauce & pinch of sugar) and bean sprouts
My secret sauce hehehehehehehe
First, hot the pan with oil, stir fry the garlic for2 minutes under medium heat.
Then, then add in the prawn and stir until its  60% cooked.
Add in the veggies!
Add some water, wait until the water boil.
Then pour in the sauce and cook for 2 minutes.
Lastly, add in the shallot, stir through for another 1 minutes and its done!

I am a fan of beans sprouts, one of my favourite veggie, but I always do it with only garlic and oyster sauce.
Tonight, I make some changes. Add in my favorite seafood - prawn, you can have other seafood, its optional  ^^
Moreover, I am also using a different sauce. A more spicy and sour sauce, sort of like Thai curry sauce.
You can always use different kind of sauce like black pepper, sweet chilli or even sambal!!
Changing the sauce  of boring this normal dish create more flavor and appetizing.
At last, I add in some shallot to give it a slightly shallot aroma, which is a perfect ending.
