Simple Vegetables and Fish Fillet Soup

Hmm gonna have something simple and healthy tonight ^^
Let's make some soup with some vegetables hehehe

Ingredients:
Choy Sum
Bean Sprouts (braised with hot water, drained  and set aside for later use)
chopped shallot
chopped garlic
fish fillet (marinated with zhao xin wine+soy sauce+pepper and some sugar)
deep fried shallot & spring onion as garnish

Seasoning:
pepper
salt
sugar
chicken powder
soy sauce
cooking rice wine
zhao xin wine
sesame oil

How to:
(a) In a pot, over a medium flame heat up some oil and stir fry the shallot and garlic for 1 minute until the aroma comes out.
(b) Add in the fish and stir fry for another 2 minutes then add in enough water until it just slightly cover the fish.
(c) Wait until the water boils the adjust the taste, add in more salt/soy sauce and pepper  + rice wine+chicken powder+sesame oil+sugar.
(d) Add in the choy sum and cook for another few minutes.
(e) Serve the soup with some bean sprouts and top with some spring onion and deep fried shallot.
ENJOY!

I really love this soup, my hubby is having it with steam rice and he is enjoying it ^^
I am using fish fillet in the soup as I love fish plus I want to have some meat in the soup
or hubby gonna complain XD
This is really of a healthy dinner with less oil and more vegetables.
You may also substitute the fish with chicken or pork, or choose any of your favourite vegetables!
It is always my favourite to have some spring onion or shallot on my soups hehehe

White Radish & Beef Soup

Hubby bought some steamboat beef and ask me to make soup, so I ask him to buy white radish as well so that I can make beef and white radish soup.

It is just a simple soup with white radish cubes, beef, some garlic and seasoning like : salt & pepper, soy sauce, rice wine, sesame oil and sugar.

I heat a pot with some oil first then stir in the garlic followed by radish for few minutes, add in some soy sauce and pepper. Then add in water and boils,  then simmer the radish for 20 minutes.


Then put in seasoning and taste, chuck in the beef lastly and cook for another 1-2 minutes.
Serve with some deep fried shallot and bowl of rice :)))))

Sour Pickled Vegetables Tomato and Fish Fillet Soup 酸菜番茄鱼片汤

Hi all, I cook this soup for tonight's dinner, extremely delicious 
and appetising to go with bowl of steam rice :)
I miss the taste of fish head soup in Malaysia, comes with the flavour of picked veggies and tomato.
I remember I use to have fish head mihun soup a lot in Malaysia especially when I am on diet,
because it just very delicious with lower calories than other meals :p
So I roughly remember the ingredients  and made this soup according to the my feeling hehehehehe

I list down what I have use for this soup,
you may substitute or add more ingredients according to personal preference :

1 x pack sour pickled vegetable (preserved vegetable)
2-3 large size fish fillet (I use basa fish fillet)
1 medium size onion
2 x medium size tomato
slices of ginger / minced ginger

Seasoning :

chicken powder
Pepper
salt
sugar
soy sauce
zhao xin wine (optional)
chinese cooking rice wine (optional)
sesame oil (optional)
deep fried shallot ( for garnish, optional)

*optional is not necessary, but with this there will be more flavour in the soup :)



Preparation:
(a) Wash and remove the core of the tomato, make a cross by using a knife
on the bottom of tomato.
(b) In a pot of hot water, blanch the tomato for 30 second and then scoop out to be
immersed into cold water immediately.
(c) Peel off the tomato skin and slice into 4-5 wedges.


How to:
(a) I boil a pot(medium or large pot ) of hot water while I am doing the rest of the preparation.
(b) Cut the fish fillet into small pieces, marinate it with
2 tsp of minced ginger / 7-8 slice of ginger + 2 tsp of sugar + 1.5 tsp of pepper
+ 2 tbsp of soy sauce + a cap of zhao xin wine.
Set aside for later use.
(c) I open the packet of preserved veggie, drain off all of the juices and cut in into smaller size.
You may not use all of the veggies, maybe around 80% from the packet, 

but you can finish using them as well :)
(d) Wash and peel of the tomato skin, cut into 4-5 wedges size.
(e) Cut the onion into smaller cube size.
(f) Once the water boils, add in the onion, preserved veggies and tomato.
(g) Put in seasoning like 1 tsp of chicken powder, salt & pepper, bits of sugar, 

more soy sauce if you prefer and around 3-4 caps of rice wine.
(h) Wait for the water boils, then add in the marinated fish fillets, stir gently
and wait until the soup boils again.
(i) Taste the soup again, adjust the flavour by adding more water or seasoning, boil it
for another 5 minutes, then add in around 2 tsp of sesame oil.
(j) Serve while it is still hot with some deep fried shallot, enjoy!

I am very satisfied with the taste of the soup, it comes out so good and make me crave for more:)
I can say its better than the one I made last year with vermicelli hahahahaha, I guess its because
of the zhao xin wine and rice wine!
And of course, if you want this soup to go with vermicelli,
make the taste stronger with a bit more salt or soy sauce as vermicelli
 often makes everything to be a bit more tasteless due to the natural taste of the rice content.


I use the tomato and preserved veggies to obtain the sourness,
onion for the sweetness, while fish for the seafood flavour. You can try it with different seafood too
such as prawn or squid, you may replace the fish fillet with fishballs as well :)
This bowl of light and appetising soup with the tenderness of you own choice of fish
plus the aroma of sesame oil and deep fried shallot makes my day and I definitely gonna make
this again in the future! Me and my hubby love it so much :)

Tomato and Egg Soup with Crab Meat 番茄蟹肉蛋花汤

Ahh yesterday I saw my aunty sharing a recipe of a tomato and egg soup, so I want to make this for my dinner tonight!
I generally look at the recipe and found that its quite simple to make, healthy and low calorie.
I guess everyone cooked this soup at home before , as it is just simply delicious!

Have some groceries shopping and I grabbed the following ingredients for 2 serves:
garlic
medium size tomato x 3
shallot
large egg x 2
crab meat (optional and quantity is adjustable)

seasoning:
salt
3 tbsp light soy sauce
pepper
2 tsp sugar
1/2 tsp of chicken powder
1-2 tsp sesame oil
deep fried shallot for garnish (optional)

The ingredient are actually adjustable and can be substitute or replaced with others veggies,
or even add in other ingredients (meat/veggies) according to personal favourite :)

I personally will add in some soy sauce as I think it will give more flavour to the soup
other than the taste of just salt and pepper.
And the final touch of crunchy shallot and sesame oil is definitely gonna make
the soup smell and taste more delicious :)

Preparation:
(a) Wash and remove the core of the tomato, make a cross by using a knife

(b) In a pot of hot water, blanch the tomato for 30 second and then scoop out to be
immersed into cold water immediately.
(c) Peel off the tomato skin and slice into thin slices.
(d) Wash and cut the shallot into around 5cm long.
(e) Chop the garlic, you will need around 2 tsp of chopped garlic.

How to:

(1)  Heat up some oil in a hot pot, put in the garlic and stir until you smell the aroma.
(2) Put in the shallot and continue stir frying for 30 second, at the same time add in
the chicken powder, pepper and salt.
(3) Then, chuck in the tomato and stir fry for 2 minutes and put in the soy sauce and sugar.
You will see the dry base is becoming more liquid as the tomato is releasing the juice.
(4) Then, put in enough water until it slightly cover the tomato.
(5) Have a taste and put in more salt and pepper if necessary, soy sauce also can be added if you prefer the taste of soy sauce. If its too salty you can always add more water.
(6) Wait until it boils, now you can add in the crab meat into the soup base.
(7)Get ready the slightly beaten eggs. While pouring it slowly you
stir the soup base until you finish pouring the egg mixture.
(8) Put on some sesame oil and garnish with deep fried shallot, enjoy!
I like this soup so much as the sourness of the tomato did enhance my appetite ^^
The egg did add in more flavour and richness to the soup which I think no one
would ever say no to this soup hahahahaha XD
The additional of crab meat give me more satisfaction, I can have it without any rice
and my hubby have 2 bowls of rice with this soup!
