Mini Tomato Pizza

I am clearing my fridge today, gonna use all of the leftover ingredients.
So I make this little pizza, with tomato and cheese:)
A very simple and easy to make dish with low calories and lots of yummmm
You don't even have to worry about making the pizza base by yourself,
just get the tortillas wrap in the store, big or small up to you!
Juicy tomato with a melting cheese and crunchy cucumber,
layers of eating texture in this little pizza!
Can act as main course or entry, everything its up to you :)

Simple recipe:
tortillas wrap
mozzarella cheese
tomato slice
cucumber
tomato paste
fresh chopped parsley/ dried parsley flake

You can actually replace or adjust the ingredients according to
your preference or favourite ^^ Just like different topping
for your own pizza!
Everything is about creativity, DIY and freestyle!
I am cutting the cucumber into small little cubes :)
Cut the wrap into smaller size (optional) as well for later use.

Over a baking tray, spread a thin layer of tomato paste on the wraps.

Then put a slice of tomato :)
I sprinkle some salt and pepper on the tomato
for a better nice.

Lastly, put on some mozzarella cheese.
Bake this at 175 degree celcius for around 5-8 minutes.
Once its out from the oven, garnish with some cucumber cubes
and parsley flake.
Enjoy!

Garlic & Thyme Herb Prawns

Owh, tonight's diner!
I got this recipe from DONNA HAY magazine.
Very easy and simple to make this :)
When come to prawn, I always wanted to try something different and new.
A squeeze of lemon juice ^^



For 25 pieces of prawns :
In a baking tray, put some olive and around 3 tsp of minced garlic.
Roast it in the oven at 180 degree celcius for few minutes.
Remember to cover the tray with aluminium foil or else
it will sparks the oil everywhere.
Or you can also simply fry the garlic on a pan for few minutes.
Then mix the garlic and oil with around 90g of butter + 2 tsp of dried chilli+
+salt and pepper+ pinch of sugar+ thyme herbs.
The actual recipe actually using tarragon herbs, but I couldn't
find it in safeway so I replace its with thyme herbs instead
which gives out citrus flavoue :)

Then on the same pan, dont wipe off any excess oil.
Place the prawn on the tray, brush over the sauce evenly.
I also put on extra salt & pepper as well as the thyme leaves.
Bake in for 5-8 minutes or until its cooked properly :)
Serve them while its still hot!

KilPatrick Oyster

Having fantastic dinner with my hubby tonight with
the baked KilPatrick oyster served with lemon wedge ^^
Baked oyster with the crispy bacon and the worcestershire sauce.
And of course, he bought dessert wine for tonight's dinner, which is my favourite ^^
I guess most of the girl loves dessert wine due to the sweet taste :)
Easy recipe and easy to make:
fresh oysters
shredded bacon
rock salt
lemon
worcestershire sauce
Wash the oyster under the running tap water, drain off any excess water.
Then on a baking tray, spread over the rock salt.
Place the oyster on the rock salt until its stable.
Pour around 1.5-2 tbs of worcestershire sauce into the oyster.

Then put on the bacon, adjust the quantity as you like, more or less :)
Bake them in a oven at around 170-180 degree celcius.
I am using the top grill setting with fan, not sure whether every oven
is having the same setting but I guess bake option with fan is fine.
Bake until the bacon is crispy, then they are ready to be served :)
Squeeze on some lemon juice as you wish,
or you can just have the oyster without it !

Mouth-watering Porterhouse Steak with Black Pepper Sauce

Present you : Daphne's Porterhouse Steak With Black Pepper Sauce
I also serve it with some green salad and crispy wedges (for guys)
Stack of porterhouse steak !!
Bought them from Woolworth, they are on special.
And since I'm craving for some meat during my diet period, I guess steak would be the suitable one ^^
For my salad, I am using cos lettuce and tomato.
Like the watery and crunchy lettuce, for tomato, just to add some colour to the salad heheheh
I am doing the dressing with some lemon juice, olive oil, salt and pepper, honey mustard and black vinegar.
Add some sugar if you want some sweetness.
This dressing is awesome and fits all kinds of salad!



Starting to pan fried my wedges, not gonna deep fried.
Troublesome, using too much oil, and so oilllyyyyy
Pan fried is more healthy I guess.
Gonna remove some excess fats on the steak, inch of fats not gonna taste pleasant.
Tenderize the steak especially on the tougher part.
Rub on some salt & pepper as well.
You can even just serve the steak without any sauce,
just some salt and pepper would bring out the steak flavor.
Steak with only salt & pepper as seasonings is the BEST STEAK!
You will be having the steak with original flavor of the beef that gonna stimulate you taste bud as well as appetite.
 I do put some rosemary to give it a slightly flavor that this spices can bring out.
Optional anyways, you can even put some chopped parsley, oregano on whatever spice that you like^^
Finally , pan fried the steak.
Tips:  use middle-low heat, if u prefer well done steak like me, you have to use lower heat.
What you wanna achieve is cooked meat all the way through into the middle part with golden brownish surface,
so u have to cook  it slowly  with low heat or else you will get very beautiful brownish out layer, but raw middle.
For medium rare : You can use medium-high heat.  Nice color at outside but some redness in the middle.
It always depend on the thickness of the steak.
I am a fan of beef, I can survive without poultry or pork, but I can't live without beef :)))))))))
I think steak is one of the important element in my diet. You can always have beef daily, just the matter of choosing the right part with less fat and the method of cooking it.
Can definitely pan fried, remove excess oil with a paper towel, you can still have delicious meal but with less calorie!
