Soft and Q Pandan Pudding :)




It has been a while since last time I blogged, I am busy working and got no extra time :(
Finally I got a perfect pandan pudding that are specially requested by my customer,
I hope he likes the new version of my pandan pudding.
Maybe I should say he will find that this is what he is looking for hahahaha...

This adjusted version of my pudding is softer and not too dry, the texture is between jelly
and kuih so I think should taste very nice.
Amount of sweetness is perfect, I also love the shinny look when I just unmould it from the cake tin.
Taaa Da, unmoulded perfectly from the cake tin yay it looks shinny with no air bubbles ^^
I really feel like cutting through the pudding and see how's the texture ehehehe
The texture is set properly but not too firm which is what I am looking for all the time,
now I have finally made it :D
I can even hold the slice on my hand without breaking it but still taste Q and moist :)

Butter Cake for Wayne + Tiramisu Mousse Cake with Biscuit base for Hudson

Everyone must have eaten butter cake before, nice and rich butter flavour cake is always the most suitable item for afternoon tea or simply a break snack.

I get this recipe from my mum which she learnt it from her sifu.
This is such a nice and tasty recipe yet simple to make.


Normally people order tiramisu cake, not tiramisu mousse because what I think is that
tiramisu only have very little sponge or sponge fingers that soaked in expresso and the rest is the creamy filling.
One my customer loves mousse cake and he wants everything in mousse form, so he requested this tiramisu mousse  cake with biscuit base :)

 I am having some time t give it a thought of how to make this as he doesn't want any sponge/sponge fingers in btw of the mousse.
So I did a layers of coffee mousse on the bottom, followed by the normal one on second layer then dusted with cocoa powder.
It does taste like tiramisu but without any sponge in btw at the same time, very nice and soft eating texture :)



I hope he will like this cake, although is its softer than normal mousse cake.
Hopefully the taste of the cake can satisfy him as well as his taste bud ^^

9'' x 9'' American Chocolate Brownies~~~~

Chocolate brownies seem to be popular among girls as well as guys.
The one I am selling is a bit crispy on the top but soft and moist in the middle.
My friends like it very much as it tastes rich and very chocolate, I have a friend that order this for his girlfriend during their anniversary.
And also a friend a mine order this for a small party in her house too.
Feel so good that everyone loves this and some of them are actually come back and re order this again hehehehe XD




Wooooooo, this one just come out from the oven.

This cake is not very tall in height, just nice to cut into cubes and everyone can pick up one for dessert or during afternoon tea.
Nice to go with a cup of tea or coffee :)
My customer usually will ask me to help them to cut the cake so that they can share among friends ^^



Total 3 orders in a go for today, finally I finish baking them and have them cut and ready in the boxes ^^

American Chocolate Brownie for Calista

It has been a very long time since I last made my brownie.
I learned to make this from my friend's mother who also selling homemade cakes, I remember we are learning this in group of 3 people including Nadia and Fifi^^

This recipe that I got from her mum is really good, now I am making this and sell it too.
Rich and moist brownie with very strong chocolate and cocoa flavour :)
I also help them to cut this brownie into little cubes for easy picking up and eating.
My friends and relatives love this so much hehehehe


I hope she likes this brownie too :)

7'' Mushroom & Bacon Quiche

Seem like my customer likes my quiche with sweet pastry as he orders again hehehe
He says just a last order before I go back to Malaysia, well of course I am happy, what a nice feedback for me^^
This is an 7'' quiche, with mushroom and bacon.
I am putting a lot of mushroom and bacon, combine with the savoury egg custard it is just perfect!
Well, for return customer I always give them a better deal as I really appreciate their business and I will always welcome them when they are back again hehe
Look at the bacon and mushroom, not sure whether everyone has tasted quiche with sweet pastry shell or not but I can tell you the taste is special and extraordinary than using savoury pastry.
I like it, this is acceptable for some people but as you know sometimes savoury also combine very well with a bit of sweetness :)


During the baking, the quiche rise up and pop up just like the picture, cute yea? 
Cut and ready to be picked up by Wayne hehe
He requested it to be cut so I done that for him, another chance for me to snap
on the cross section kekeke :p

Red Velvet Indulgence

One of my customer has returned back for another 10'' cake for her colleague farewell party.
She is after a red velvet cake and she loves the design of my first red velvet cake, which is full of mini roses on the top and white chocolate pieces around the side.
I am actually quite confident in making this cake after so many times of taking order for birthday cake.
I hope I can make something the would please them and they would love my work and taste of the cake.
Pink roses and rope borders cream cheese frosting on the cake, and also white chocolate pieces on the side with lovely hearts pattern :)
It looks so girly for me, but I think she will definitely love it :)


It is ready to be delivered to PEI^^
With some red velvet crumbs, I also make them into these red velvet
ball coated with Cadbury Milk Chocolate.
It is nice to eat and it is a sweet delight which I think every girl will love this ^^

And also with some of the red velvet cake batter, I make them into these little
cupcakes piped with pink cream cheese frosting :)

Bacon & Mushroom Quiche + Pandan and Peanut Butter Swiss Roll

I remember when I was working in Langham, I used to work overtime just to bake tons of quiche for a function.
Before that, I thought quiche should be pronounced as "kirsh" hahaha
But well at least I learnt how to make a quiche now hahaha

Quiche is actually a savoury tart, with your choice of meat or you can have it vegetarian as well.
It is not hard in making quiche but when you are doing the egg filling, I guess its hard to measure how much seasoning like salt to be put in.
Not that I am lucky but everytime the quiche I make just taste right hahaha
With mushroom and bacon inside.
My customer also order a swiss roll, a pandan swiss roll with peanut butter.
Not many people has eaten swiss roll of this flavour before, so it sounds so cool
to them when I mention Pandan & Peanut Butter Swiss Roll.

My mum always buy this one from her friend, thats when I know this and decided
to sell this swiss roll of this flavour.
You will never know how would it tastes like when pandan and peanut
link together, they just combine so great together!
For this time, I am using sweet shortcut pastry for the shell, so it tastes sweet on the shell
and savoury filling in the middle.
 It tastes good actually, sweet and savoury sometimes go very well
together hehe :)

Mango Pudding with Mango Cubesss

Getting mango pudding for tonight's dessert yay~~~~
I add in some mango cubes to get more mango flavours,
I don't know why I just love mango so much~~~~

I make this by using a normal mango jelly mix, replace 2/3 of water with
evaporated milk, maybe need to add more sugar next time as evaporated tends
to bring away some of the sweetness haha.
A perfect cut of mango pudding on a plate.
Serve it with some evaporated milk, they both combines perfectly!


Despite that the texture is a little bit too firm, it actually taste great!
Maybe add more water next time because I did reduce the amount
of water so that they set firmly.
My hubby love this and he is having them with some evaporated milk hehehe
I am making this mango pudding on a pyrex tray, then add in the mango cubes
then go into the fridge for 4 hours.
I am waiting~~~~
The pudding comes out perfectly, like TOFU~~
I should just make them in a small plastic cup next time as it
hard  to move them around especially when they are fragile
and with the mango cubes around ^^

Coffee Chiffon Cake

As I mentioned before, I will be keep on making chiffon cakes with different flavours.
This time I make the coffee one, using double expresso from the freshly grounded coffee bean.
Another attempt on chiffon cake this time, and I am also giving it free to my friends as this testing stage of coffee flavour.

crema , I smell coffee around my house :)

The texture of the chiffon cake is very good out of my expectation, it is very moist
and soft like cotton.
The coffee taste and flavour is rich enough for the whole cake, I think the expresso
did make my cake more moist and soft.
Still the flavour of the coffee is just at the right dose :)
One problem about this cake is that I am having a hard time in getting the cake out,
it is harder to have the knife run around the cake perfectly and clean.
Consequently, the surface of the cake torn off a bit, so no clean and perfect looking cake.
The cake actually bounces back when I press it, this is what I am looking for a  "CHIFFON CAKE"^^

Durian Swiss Roll with Meringue

Ohhhhh finally durian swiss rolls:)
Spongy swiss roll with durian cream, topped with some meringue (always wanted to do this XD)
I actually made this for friends that visited to our place today, its first day of chinese new year!
Melbourne seems to be lack of new year atmosphere, feel so boring here I wanna go back :(
A slice of swiss roll is best to go with coffee but today is so hot, its 35 degree celcius and I am sweating all day.
So I made some refreshing lemonade for my guest, they seem to like the rolls very much and everyone have 2 slices then the whole roll is gone :p

They say its nice, I also like this a lot because of the soft sponge and the durian cream, and the meringue did add a lot of points for this swiss roll hehe
I am happy of course,  didnt want to keep the swiss roll in fridge for too long.
Well I am also selling this, got this into my order menu :)
I pipe the meringue in this way because I saw a lemon meringue tart of a cafe in Westfield shopping centre is having the meringue piped like this in the middle of the tart.
This is so cute and like those honey bee nest hehe

Not exactly like the one I saw, but still I like it XD
I also blow torch the meringue so that it is a bit brownish on the outside, what do you think?


6'' Durian Cake for Jeannie

Another customer order for durian cake, a new customer which is friend of friend :)
A 6'' durian cake with lots of durian cream cheese on the top!
Hope she will love this and give me some positive feedback about this.
