Simple Vegetables and Fish Fillet Soup

Hmm gonna have something simple and healthy tonight ^^
Let's make some soup with some vegetables hehehe

Ingredients:
Choy Sum
Bean Sprouts (braised with hot water, drained  and set aside for later use)
chopped shallot
chopped garlic
fish fillet (marinated with zhao xin wine+soy sauce+pepper and some sugar)
deep fried shallot & spring onion as garnish

Seasoning:
pepper
salt
sugar
chicken powder
soy sauce
cooking rice wine
zhao xin wine
sesame oil

How to:
(a) In a pot, over a medium flame heat up some oil and stir fry the shallot and garlic for 1 minute until the aroma comes out.
(b) Add in the fish and stir fry for another 2 minutes then add in enough water until it just slightly cover the fish.
(c) Wait until the water boils the adjust the taste, add in more salt/soy sauce and pepper  + rice wine+chicken powder+sesame oil+sugar.
(d) Add in the choy sum and cook for another few minutes.
(e) Serve the soup with some bean sprouts and top with some spring onion and deep fried shallot.
ENJOY!

I really love this soup, my hubby is having it with steam rice and he is enjoying it ^^
I am using fish fillet in the soup as I love fish plus I want to have some meat in the soup
or hubby gonna complain XD
This is really of a healthy dinner with less oil and more vegetables.
You may also substitute the fish with chicken or pork, or choose any of your favourite vegetables!
It is always my favourite to have some spring onion or shallot on my soups hehehe

Crispy Salt & Pepper Prawns

Hi all, I learn this very simple salt and pepper prawn from one of my friend JIAYUAN.
As you know, I love seafood especially prawnss
Whatever to go with prawns, I love them so much!
This is a very easy to make prawn dish, but it requires some deep frying before go to stir fry.
3 of the main ingredients for stir:
spring onion/shallot
garlic
 red chilli
Chop the garlic and chilli, and slice the spring onion then set aside for later use.
For the prawn, I put in some seasoning like salt and pepper before I coat them
with the egg and flour so that it has some taste.
Then I coat them with egg followed by flour (I mix in with some corn flour)
then deep fry them in a pot of hot oil at 165 degree celcius for 5-7 minutes
or until golden brown.

The picture above is how the prawns look like after deep frying.
Then in a hot pan with some oil, stir fry the rest of the ingredients for 2 minutes
or until the aroma comes out, add in the prawns and keep on tossing until
they are well combine.
Lastly, add in some salt and pepper for taste then it is ready for serve.

Sweet and Sour Fish (酸甜鱼片)

Its a very hot summer this month, my hubby lost
his appetite so he is asking for something sweet and sour.
Still a very simple dish that I made for tonight's dinner, sweet and sour fish :)
Fish is one of my favourite food, particularly ginger and shallot fish fillet but I also
love them serve in a sweet and sour manner hehehe

What I have used:
I am using basa fish fillet that are ready to be cut into slices and cooked.
Using simple ingredients like onion, shallot, garlic and bits of minced ginger.
For the sauce, I am using tomato sauce + white vinegar+ white sugar+lemon juice.
Mix the sauce in a bowl before cooking and have a taste :)
Adjust the taste of the sauce, I am using lots of sugar for this.
I also marinate the fish in a bit of soy sauce, white pepper, salt and shao xin wine + rice white.



*If you would like to : add some pineapple and capsiums for more colour and flavour :)

Steps:
(1) Stir fry the onion, garlic and shallot plus ginger over a hot pan with some oil for 2 minutes.
(2) Add in the fish and stir fry until its 50% cooked.
(3) Pour in the sauce and stir until the fish is well coated, cook for another 3-4 minutes.
(4) Have a taste, add in more sugar or salt if necessary.
(5) If the sauce is too much or too thin, add in some corn flour water to thicken the sauce a bit
OR I DO IT THIS WAY
scoop out all of the fish, leave the sauce in the pan and continue to cook until it is reduced to thicker sauce, then pour over on the fish and serve :)
ENJOY!
Not a complicated dish at all, you can also deep fried the fish before you cook it
with the rest of the ingredients and sauce so that it is crispy.

Just dip the fish in cornflour -> egg -> flour then deep fried it in a pot of hot oil
at 160-165 degredd celcius until golden brown :)

I omitted this step to avoid cleaning and longer cooking time, and also
for lower calorie & healthy meal :p
It is something very optional, just do it the way you like ^^
Sprinkle on some white sesame/fresh coriander before serve :)

Garlic & Thyme Herb Prawns

Owh, tonight's diner!
I got this recipe from DONNA HAY magazine.
Very easy and simple to make this :)
When come to prawn, I always wanted to try something different and new.
A squeeze of lemon juice ^^



For 25 pieces of prawns :
In a baking tray, put some olive and around 3 tsp of minced garlic.
Roast it in the oven at 180 degree celcius for few minutes.
Remember to cover the tray with aluminium foil or else
it will sparks the oil everywhere.
Or you can also simply fry the garlic on a pan for few minutes.
Then mix the garlic and oil with around 90g of butter + 2 tsp of dried chilli+
+salt and pepper+ pinch of sugar+ thyme herbs.
The actual recipe actually using tarragon herbs, but I couldn't
find it in safeway so I replace its with thyme herbs instead
which gives out citrus flavoue :)

Then on the same pan, dont wipe off any excess oil.
Place the prawn on the tray, brush over the sauce evenly.
I also put on extra salt & pepper as well as the thyme leaves.
Bake in for 5-8 minutes or until its cooked properly :)
Serve them while its still hot!

KilPatrick Oyster

Having fantastic dinner with my hubby tonight with
the baked KilPatrick oyster served with lemon wedge ^^
Baked oyster with the crispy bacon and the worcestershire sauce.
And of course, he bought dessert wine for tonight's dinner, which is my favourite ^^
I guess most of the girl loves dessert wine due to the sweet taste :)
Easy recipe and easy to make:
fresh oysters
shredded bacon
rock salt
lemon
worcestershire sauce
Wash the oyster under the running tap water, drain off any excess water.
Then on a baking tray, spread over the rock salt.
Place the oyster on the rock salt until its stable.
Pour around 1.5-2 tbs of worcestershire sauce into the oyster.

Then put on the bacon, adjust the quantity as you like, more or less :)
Bake them in a oven at around 170-180 degree celcius.
I am using the top grill setting with fan, not sure whether every oven
is having the same setting but I guess bake option with fan is fine.
Bake until the bacon is crispy, then they are ready to be served :)
Squeeze on some lemon juice as you wish,
or you can just have the oyster without it !

Asam Pedas Belacan Crispy Fish Fillet with Rice

Crispy fish fillet go with onion and green chilli, serve with steam rice and homemade asam
pedas belacan.

Yummm
Very easy recipe and cooking method:
fish fillet
onion
green/red chilli
coriander for garnish
Stage 2 after the preparation of the ingredients:
Wash and dice onion into cubes, slice the chilli.
Cut the fish fillet into square shape, marinate it with pepper,
salt, bit of soy sauce and SAO XIN wine.
Get ready the flour and beaten eggs in separate bowls.
Marinated fish.
Should look darker in colour since there a bit of the soy sauce.
Leave in for 20-30 minutes.
Dip the marinated fish into beaten eggs, then followed by flour.
Deep fry the fish in hot pot of oil at 160 degree Celsius until
golden brown in colour.

Golden and crispy fish fillet, it taste so good even you don't eat it alone without any rice ^^

Then, get a small pan and heat up some oil.
 Stir fry the onion and chilli, add in some salt and pepper to taste.
Continue stirring until the onion slightly turn into yellowish color.

Serve the fish fillet with rice, belacan and onions, garnish with some coriander. 
I made this belacan by myself, it taste a bit sweet and sour and spicy!
Actually I want to make sambal but adding to much tamarind paste so it becomes a bit sour haha

Very simple recipe for this belacan:
Deep fried anchovies 100g-150g (I bought those that are still raw, so I deep fry then in a pot of hot oil until its crispy)
chilli paste (3-4 tbp)
tamarind paste (1-2 tbp), adding too much the belacan will be sour
1 big onion
sugar (2-3 tbs, depend whether you want it to be sweeter or spicy)
salt to taste

Method:
Use some warm water to mix with the tamarind paste until it is gravy.
Slice the onion.
Heat up some oil in a hot pan, stir fry the anchovies and onion for 2 minutes,
then add in the chilli paste and tamarind paste and juice.
Wait until it boils.
Stir and pour in some water (not sure about the quantity but it would be around 250-300ml, adjust the water amount until you get the consistency you prefer), add  in the salt and sugar.
Keep tasting the belacan, add more salt or sugar until achieve the taste that you want.
Continus stirring and cook for another 5-8 minutes.
Dinner is served!
Hubby likes its so much hehehe

Deep Fried Calamari (Sotong Goreng)

I am doing some experience with this crispy squid.
The one I have in OLDTOWN before is very yummy,
crispy and taste just nice!
You will need some squid tubs,
Cut them into ring,
not too thin and not too thick :)
Rinse them with water, then strain away any excess water.
The spices that I use are almost the same with the one I used in my American Fried Chicken.
Bit of turmeric powder,  paprika powder, pepper, salt,  sugar.
This time I put Around 2 tsp of 
curry powder into to give more colour and taste!
Remember to put more salt as
the squid itself is tasteless, you want to taste
something savoury in your squid other than the spices :) 


Mix them all up, and you will 
get yellowish colour like my picture.
The smell would not be pleasant until its cooked!
I marinate the squid for around 2-3 hours just to let all the flavour
soak into the squid.
If you don't marinate it, squid itself would be tasteless.
Then, dip the into plain flour, 
get all of the area covered with flour,
tap off excess flour and deep fry them into pot of hot oil (160 degrees celcius) until golden brown.
They must be covered with flour (look powdery) or
else you wont get nice and crispy shell 
There you go, calamari is served :)

Seafood Skewers

Very simple cooking meal with only few ingredients and you can have hotel style dinner at home!
These skewers goes with fresh cucumber with some lemon juice as well as sambal for dipping!
And guess what, you can have any seafood you like on your skewers!
I have chose prawn (my favourite), squid and salmon, plus some onion for some veggie sweetness!
I only sprinkle on some salt and pepper, thats it!
It is so simple, you don't need to have complicated seasoning on you seafood, 

just some salt and pepper will do!
would make them fantastic as seafood themselves has their own natural sweetness!
Once you get your ingredients ready, just have some fun by getting them on the stick in the way that you like ^^
Then, just grill them on a hot pan with oil until they are cooked!

Bit of lemon juice make these skewers so appetising, with some fresh cucumber a side you just can't stop eating :)
Plus some mild spicy sambal, this will definitely add more flavours to your skewers if you want something taste different and exciting!
