Belacan Kang Kung with Minced Pork and Dried Shrimps

This is my first time cooking kangkung at home, I love kangkung and when I go to Thai restaurant I always order their spicy crispy pork with kangkung.
At first, I thought belacan=sambal so I ask my hubby to buy belacan.
Who knows its different, so well I have to use belacan even though I have never use belacan before!

And guess what, everything just come out tasty and it was a great dish after all.
I also topped with some minced pork because my hubby always want some meat or else he wont feel full and satisfied.
Ingredients:
2 x bunch Kangkung
2 tsp of chopped garlic
30g dried shrimp
150g of minced pork (optional and can be ommited)
35-45g of belacan paste
chilli paste / chillisauce / dried chilli / fresh chopped red chilli (optional)
2 tsp of soy sauce
salt
sugar
pepper
1 tbsp white vinegar
water
crispy shallot (for garnish & optional)

How to:

(a) I pan fried the minced pork first with some salt, soy sauce, pepper and sugar. Set aside on a plate for later use.
(b) Over a hot pan with some oil, I fried the garlic first until the aroma comes out then followed by dried shrimp for 1 minute until the shrimp looks golden in colour and crispy.
(c) Then, add in the kangkung and stir fry for 2 minutes. Add in pepper, bit of salt and sugar.
(d) I soften the belacan paste with some hot water and then pour it over the kangkung, you have to do this approximately but I am using around 35g of belacan paste. Just adjust the amount, add in more water if the base is too dry.
(e) Add in the chilli paste (adjusted according to personal preference) and around 1 tbsp white vinegar, stir fry it for another 2-3 minutes.
(f) Have a taste on the sauce, if its salty enough then its ready, if not add a bit more salt/belacan. Add some water if its too salty and a bit of white vinegar.
(g) Sprinkle over the cooked minced pork and garnish with some shallot, dinner served and enjoy it with a bowl of rice!
It is really nice to have this with a bowl of steam rice, as the belacan taste is very rich perfect to go with rice.
You can also replace dried shrimp with prawn cutlets, the dried shrimp very is suitable to go with any belacan dish.
A bit of spiciness which comes from the chilli paste would really make this dish to be more exciting and appetising!
No matter you like spicy or not, just put a bit of chilli paste in this dish, it gonna taste  really great.
Now I know to use belacan and what should it be used on hehehehehehehe

Glad that my hubby like this and I will make this more often because I love kangkung so much ^^

I am clearing my fridge today, gonna use all of the leftover ingredients.
So I make this little pizza, with tomato and cheese:)
A very simple and easy to make dish with low calories and lots of yummmm
You don't even have to worry about making the pizza base by yourself,
just get the tortillas wrap in the store, big or small up to you!
Juicy tomato with a melting cheese and crunchy cucumber,
layers of eating texture in this little pizza!
Can act as main course or entry, everything its up to you :)

Simple recipe:
tortillas wrap
mozzarella cheese
tomato slice
cucumber
tomato paste
fresh chopped parsley/ dried parsley flake

You can actually replace or adjust the ingredients according to
your preference or favourite ^^ Just like different topping
for your own pizza!
Everything is about creativity, DIY and freestyle!
I am cutting the cucumber into small little cubes :)
Cut the wrap into smaller size (optional) as well for later use.

Over a baking tray, spread a thin layer of tomato paste on the wraps.

Then put a slice of tomato :)
I sprinkle some salt and pepper on the tomato
for a better nice.

Lastly, put on some mozzarella cheese.
Bake this at 175 degree celcius for around 5-8 minutes.
Once its out from the oven, garnish with some cucumber cubes
and parsley flake.

Stir Fry Eggplant with minced Pork & Tofu ^^

Last night, I am thinking what to cook for tomorrow dinner.
Then I come up with the idea of eggplant with minced pork together.
Maybe some onions and tofu would make it more tasty.
Okay, then I cooked this simple dish for my hubby : Tender eggplant with soft tofu and a bit of pork and onion flavour.
As you can see : Simple Ingredients
Slice the onion, cut the tofu into cubes and cut the eggplant into
long rectangular shape.

For a little bit of meat, I use some minced pork in this dish.

Szzzzzzzlingggg
The deep frying process is going on :)
I deep fried the eggplant a bit just to make partially cooked it,
and also to make it more tender.

After the deep frying, the eggplant looks more golden and shinny in colour ^^
Then you can proceed to the stir fry.
Put into the minced pork after the onions, then add some water and put in any seasoning that you like like
oyster sauce, soy sauce, sesame oil and a bit of salt/sugar and pepper to taste.
I am sure you can find all these simple seasoning at your kitchen.
Put in the egg plant after the sauce start simmering, let the eggplant absorb the sauce,
cook it for few minutes just to let it more tender and cook more through.
Put in the tofu lastly, cook for 2 minutes then thicken you sauce by using some corn flour water.
Then, dinner is served!!

Stir Fry Veggies and Prawn Cutlets with Oyster and Garlic Sauce

Still, on diet. Gonna have veggies but want to get some meat as well.
Simple mix vegetables and seafood, you can choose you favourite vegetables and seafood.
Well, I am having prawns again ^^

Snow peas, Mushroom, carrot and mini corn.
I got prawn cutlets from Woolworth.

Wash and season them with some salt and pepper, add some soy sauce.
This is what I do whenever I got meat in my dish.
Just simply some salt and pepper would add the taste.

I stir fry the veggies first, as carrot need longer cooking time.
Put in some oyster sauce and water (almost cover the veggies), wait until it boils.

Then add in the prawns, stir to combines.
I simmer it with a pot cover for around 5 minutes, Just to reduce the sauce a bit and cook the dish to more tender state.
Put in some seasonings like salt/pepper/sugar just to add some taste.
LASTLY,  I thicken the sauce with some corn flour water.
Then, dinner is ready!

Thai style Stir Fry Bean Sprouts with Prawns

The delicious veggies and seafood for tonight's dinner ^^
Basic ingredients:
garlic, shallot, prawns(marinate with pepper and soy sauce & pinch of sugar) and bean sprouts
My secret sauce hehehehehehehe
First, hot the pan with oil, stir fry the garlic for2 minutes under medium heat.
Then, then add in the prawn and stir until its  60% cooked.
Add in the veggies!
Add some water, wait until the water boil.
Then pour in the sauce and cook for 2 minutes.
Lastly, add in the shallot, stir through for another 1 minutes and its done!

I am a fan of beans sprouts, one of my favourite veggie, but I always do it with only garlic and oyster sauce.
Tonight, I make some changes. Add in my favorite seafood - prawn, you can have other seafood, its optional  ^^
Moreover, I am also using a different sauce. A more spicy and sour sauce, sort of like Thai curry sauce.
You can always use different kind of sauce like black pepper, sweet chilli or even sambal!!
Changing the sauce  of boring this normal dish create more flavor and appetizing.
At last, I add in some shallot to give it a slightly shallot aroma, which is a perfect ending.
