Tiramisu from Jeannie for His 23rd

Tiramisu!!! Who doesn't like tiramisu :p
Finally there's a customer order this cake for her loves one.
Its Jeannie again that having this cake as a surprise for her boyfriend 23rd birthday, lucky him :p

I remember last year I also make a tiramisu for hubby for his birthday celebration hehehe
Maybe tiramisu is very suitable for guy's birthday ???
I piped some chocolate filigri on the sponge fingers, so that it looks not so plain and pretty.
Instead of dusting whole top of the cake with cocoa powder, I did in alternately.
Obviously, somehow the cocoa powder just soak the moisture of the cake which doesn't look pleasant, so I guess making it this way can reduce the imperfection yet different ^^

A heart is requested by Jeannie to show her love towards Lam, how sweet~~~
I hope he will like the cake :)

Durian Cake with Extra Durian for Cici

Its durian cake again, this time it is with extra durian flesh specially requested by Bobby :)
As you can see, whole cake is covered with durian cream cheese.
Ahh looks so shinning hahaha, " golden effect " :p
I am sure this will taste really good hehehehe
Half standing chocolate writing, I think this looks really nice isn't?
I also sprinkle some silver sugar pearls so that it won't look too boring ^^

New skill that I have learn to decorate the side of the cake :)

Chocolate Mudcake & Vanilla Cupcakes for Isla's 1st Birthday

This is my very first fondant cake order from my friend's sister.
She is ordering this cake for her daughter 1st birthday party.
At first I thought she is after fresh cream cake or cream cake, but then she says she wants a fondant cake. A bit nervous but I am getting exciting!
The picture in the top is the design of the cake she wants me to make, she design it all by herself so sweet~~

Chocolate cake is the flavour that she is after, hmm sounds yummy for both kids and adults yea?
Obviously, Isla loves pink color hehehehe

Everything is done according to the design, except for few things that I amended after few discussion with her.
The bunny looks a bit different, I try my best to make it look as exact as possible but somehow picture from computer cannot be applied to decoration as everything is handcrafted so it might look weird if I do 100% the same.
She doesn't mind at all ahaha, luckily~~~~~
I am very happy that her family actually say "WOW" when they see the cake hehe.
Katie and her family all love my work, this makes me in a very good mood all day long^^
I learn how to make the ribbon/bow from a cake book, this look really pretty
and nice isn't?

She also order a dozen of cupcakes to go with the big cake, vanilla cucpakes with pink butter icing and decorated with rainbow thousands and fresh strawberry :)

It took me some time to finish this gumpaste decoration in advance.
Hearts, butterflies, little flowers, bunny and some alphabets all done^^

Again, trying on new recipe from a book, I am also using new recipe for the chocolate mud cake.
This cupcakes recipe turn out very good, not over rising or flowing out in the oven, not peeling off from the patty pan when it is bakes. This is the major problem that I am facing all the time, now no more problem with the new recipe yay ^^
The recipe is just enough for a dozen of cupcakes, not too less and not too much, I love this recipe and finally~~~~

Same thing applies to my chocolate mud cake, nice and good texture with nice flavour.
This is what I am gonna use for future chocolate mud cake orders hehehehe
Pink butter icing is piped on the cupcakes, looking nice and even.
This is what I gonna do at my workplace soon, ah I am so nervous~~~~~

Being a cake decorator is fun sometimes, but if you are pushed by someone
under a stress and new environment, everything can be so different and bad ><

I think the cupcake looks pretty even without the strawberry hehehe, what do you think

Got this little gift treat when I am delivering the cake to her house, filled with lollies and green tea bag^^ so sweet ~~~~~

Cold Blueberry CheeseCake for HUDSON's Birthday

A special request from one of my regular customer for this blueberry cheesecake.
Actually he is after a blueberry cheese mousse cake, but I think it is hard to have cheese and mousse together at the same time as cheese is quite heavy while mousse is lighter.
So I am suppose that he want to have a cold blueberry cheesecake, which is not as heavy as baked cheesecake but with smooth and creamy texture :)

I am using my old recipe for the cheesecake with the combination of blueberry puree from another cheesecake recipe, added some gelatine so that it will set properly int he fridge.

Thank god that it set well in the fridge, or else I have to re do everything :p

I decorate the cake with some whipped cream, coloured into green to make some veins and
leaves then add on some fresh blueberries :)

I am happy with the look, what do you think?
I hope he finds that this cake is similar to the taste that he is looking for,

First and success Cotton Cheesecake in Melbourne

Back to MELBOURNE again, I did my first cake ^^
This is what I achieved by using a fan forced oven in Melbourne.
The cake is taller than usual one.
The main point is when folding the egg white together with the cream cheese batter, it has to be very gentle and soft motion.

Keeping an eye when the cake is in the oven also very important, because I dont want it to rise too much and cracks.
Top cracks a bit, but when it shrink back to flatten surface the cracks is not that obvious anymore which is so different than the one I make in KK.

Even the cake is tall in height, the texture in the middle not as compact as the usual one.
The texture is very moist and  little bit crumbly, still very nice like eating vanilla ice cream :)

I prefer it to be lower in height so that I can get a compact texture in the middle hehehehe
I hope he will like this cake as everyone does :)

9'' x 9'' American Chocolate Brownies~~~~

Chocolate brownies seem to be popular among girls as well as guys.
The one I am selling is a bit crispy on the top but soft and moist in the middle.
My friends like it very much as it tastes rich and very chocolate, I have a friend that order this for his girlfriend during their anniversary.
And also a friend a mine order this for a small party in her house too.
Feel so good that everyone loves this and some of them are actually come back and re order this again hehehehe XD

Yumm Yumm
This cake is not very tall in height, just nice to cut into cubes and everyone can pick up one for dessert or during afternoon tea.
Nice to go with a cup of tea or coffee :)
My customer usually will ask me to help them to cut the cake so that they can share among friends ^^

Total 3 orders in a go for today, finally I finish baking them and have them cut and ready in the boxes ^^

American Chocolate Brownie for Calista

It has been a very long time since I last made my brownie.
I learned to make this from my friend's mother who also selling homemade cakes, I remember we are learning this in group of 3 people including Nadia and Fifi^^

This recipe that I got from her mum is really good, now I am making this and sell it too.
Rich and moist brownie with very strong chocolate and cocoa flavour :)
I also help them to cut this brownie into little cubes for easy picking up and eating.
My friends and relatives love this so much hehehehe

I hope she likes this brownie too :)

Pandan Chiffon Cake for Emily

Lots of my friends love pandan cake, but I will suggest pandan chiffon cake as it is lighter and nice to be eaten :)
My mum specially blend the pandan leaves with her blender with some water and make it like pandan paste for my cake ^^
Her blender leaves no pandan lumps at all, just the pandan fragrance and the juice BRAVO MUMMY! This pandan chiffon cake it very soft and moist to eat because of the pandan juice hehehe  Can you see the natural colour of the cake???
