Bobby's order for swiss rolls and cakes, first massive job for me!

My first and biggest order since the last 6 months, a return customer as usual - BOBBY
He ordered quite a few items in a go, as you can see there's chocolate, pandan and durian swiss rolls + oreo cake + pandan chiffon cake and Japanese cotton cheesecake.
This is really a challenge for me, working in the kitchen will not be easy when you have to keep washing dish hahaha

Well at least I manage to finish all on time just before I go back to Malaysia tomorrow weeeeee
Hope he will like all the goods and please do come back again if you really like my food, thank you so much for your business Bobby!
Appreciated deeply in my heart!

Bacon & Mushroom Quiche + Pandan and Peanut Butter Swiss Roll

I remember when I was working in Langham, I used to work overtime just to bake tons of quiche for a function.
Before that, I thought quiche should be pronounced as "kirsh" hahaha
But well at least I learnt how to make a quiche now hahaha

Quiche is actually a savoury tart, with your choice of meat or you can have it vegetarian as well.
It is not hard in making quiche but when you are doing the egg filling, I guess its hard to measure how much seasoning like salt to be put in.
Not that I am lucky but everytime the quiche I make just taste right hahaha
With mushroom and bacon inside.
My customer also order a swiss roll, a pandan swiss roll with peanut butter.
Not many people has eaten swiss roll of this flavour before, so it sounds so cool
to them when I mention Pandan & Peanut Butter Swiss Roll.

My mum always buy this one from her friend, thats when I know this and decided
to sell this swiss roll of this flavour.
You will never know how would it tastes like when pandan and peanut
link together, they just combine so great together!
For this time, I am using sweet shortcut pastry for the shell, so it tastes sweet on the shell
and savoury filling in the middle.
It tastes good actually, sweet and savoury sometimes go very well
together hehe :)

Durian Swiss Roll with Meringue

Ohhhhh finally durian swiss rolls:)
Spongy swiss roll with durian cream, topped with some meringue (always wanted to do this XD)
I actually made this for friends that visited to our place today, its first day of chinese new year!
Melbourne seems to be lack of new year atmosphere, feel so boring here I wanna go back :(
A slice of swiss roll is best to go with coffee but today is so hot, its 35 degree celcius and I am sweating all day.
So I made some refreshing lemonade for my guest, they seem to like the rolls very much and everyone have 2 slices then the whole roll is gone :p

They say its nice, I also like this a lot because of the soft sponge and the durian cream, and the meringue did add a lot of points for this swiss roll hehe
I am happy of course,  didnt want to keep the swiss roll in fridge for too long.
Well I am also selling this, got this into my order menu :)
I pipe the meringue in this way because I saw a lemon meringue tart of a cafe in Westfield shopping centre is having the meringue piped like this in the middle of the tart.
This is so cute and like those honey bee nest hehe

Not exactly like the one I saw, but still I like it XD
I also blow torch the meringue so that it is a bit brownish on the outside, what do you think?

My first Christmas Log

Its 25th Dec now, Merry Christmas to everyone!
I made my first christmas log early of today,
its a chocolate swiss roll with cream cheese filling and sweetened cherries.
I pipe on the chocolate whipped cream on the swiss roll to make it looks like log,
its the simplest way to do this I guess.

I always want to make a log as my hubby like swiss rolls so much, now I have got a chance to do so hehe
I snap the pictures along with the xmas decorations that I bought today, the mini

xmas tree and angel in a bulb:)
Its time to decorate after I chill them for few hours in the fridge!!!!!
I put on a xmas tree that made of royal icing and a "MERRY CHRISTMAS" banner hehehe
And of course along with my handcrafted santa claus, gifts and snowman hehehehe
Have you got any christmas presents yet????
Creamy cheese cream with sweetened cherries is rolled into the log:)
I guess chocolate sponge goes very well with cream cheese and cherries, just like black forest cake!
Hope it taste good as I wish, gonna snap some pictures once I cut the log hehehe

Little santa and snowman handcrafted by me, feel relieve that at least they look like what they are :p

Yeepeeee, dessert time!!!!!!!
Here I cut the log, you can see the cream cheese and the cherries
surrounded by the chocolate sponge and thick chocolate whipped cream :)
It tastes like what I have expected, yummy and my hubby likes it!

Wish everyone a wonderful Christmas and have their wish granted during the new year :)
Hope you enjoy my blog and the pictures.
And again, HAPPY NEW YEAR 2012 in advance to all of you :)

Attempts on making delicious Swiss Rolls

Daphne's SWISS ROLLS, Fresh Strawberry and fresh cream/ Chocolate butter cream with vanilla sponge /Pandan & Peanut Butter
I realise there's few tricks of making a swiss roll:
1. The Sponge (hard to get a good recipe)
2. The rolling skills without damaging/ cracking the sponge.
3. To get rid all of the air bubble or space of the cream when u roll up the sponge. Which is when u cut it, u see NO hollow space which caused by the uneven spread of the filling and pressure when rolling up the sponge.
4. Make sure you spread enough butter cream/filling, or you will end up a flat swiss roll which you wont get a cylinder shape ^^
5. When you are using fruits like Strawberry or sour based fruits: remember to soak them in syrup (water+rum+sugar+lemon juice), or else they gonna taste really sour when you bite the swiss roll together with the fruits !

This is so tricky, especially when you do it with solid foods like fruits inside the sponge, you gotta make sure the cream is enough to cover all of the hollow space caused by the fruits!

I try making swiss roll for few times, with diff tricky skills.
And now I learnt from my mistakes.
I love the Vanilla Sponge with fancy Chocolate pattern on top. I am gonna make a nice and different one next time :)
