Durian Cake

Got an order from Gin for his mum's and friend's birthday.
He want 2 durian cakes.
So I decided to give it a go.
First of all, the sponge is very important.
I made the sponge in a round tin and slice them into half.
Durian cream cheese filling in the middle yummmm

Then, I hate this part : levelling the cake.
Now I found a best way to level my whipped cream on the cake
evenly and smooth :p
I also pipe on some green colour durian whipped cream on the bottom border.
It is really hard to get a nice piping with the durian flesh in the cream,
but this is the only way to make it taste very durian.
To match the green colour, I spread some yellowish durian cream cheese on the top too :)
I really have no idea how to decorate the durian cake,
because durian is durian, headache....
In order to make it nicer, I put on some chocolate drizzle and
a piece of durian with gold leaves.
Hope this will add on some impression marks.
But I guess the taste is more important :)

Gin is picking up the cakes :)
With the durian flavour in the cream cheese to
go with the sponge, that will taste so good.

Strawberry Macaroon with real Silver Flake

Attempt on Macaroons making again.
But this time I am using strawberry ganache as filling
and small piece of real silver flake on the top as decoration :)

Very strawberry ganache filling sandwiched between the 
macaroon shells, sweet enough for the sweet lovers.

Smooth and nice consistency  is ready for the next step.

in consistency, 
perfect for piping as its not gonna gone flat
so much and stay in peaks form.





Busy piping, I got almost 4 trays for 1 batch.

ONDE ONDE

Although this is not a huge order, but I am happy to make it for Jerome and David.
I expect them to be here within 30 minuted after everything is done,
because it the best to have them fresh and slightly warm!
Just reheat them in an oven, steam bake for 5-8 minutes,
you can taste the melting palm sugar and the soft and chewy glutinous ball.
The onde onde goes hard when you put them at room temperature,
so don't store them in the fridge ^^

Hello Kitty Chocolate Drawing

This piece of chocolate is for the decoration of the cake
for my customer's orders.
New challenge for me but everything go on
fine, not perfect but almost ^^

Strawberry Mousse Cake with HELLO KITTY Chocolate


This is was actually a rush order from my friend, 
luckily she want something similar that I made before.
The mousse cake that I made last week seems to be popular and everyone wants it!
She want a hello kitty cake, I know its hard to make the whole cake in hello kitty,
but she says if its no possible I can put on something else.
How can I turn down my customer wants? So I give it a thought and I come
up with the chocolate work drawing!
But this time I make it into a round cake :)
Well you can see clearly the strawberries and the pink color mousse:)

This is a 8 inch cake.
At first, my plan is to put a layer of strawberry ganache on the top instead of the dark chocolate one.
But they seems to be softer and was really hard to manage, I got all my place messed up!
So plan B, I go back to chocolate ganache again.

Drawing the hello kitty with candy melts is fun but it was hard!
Every line need to be accurate, no mistake is allowed at all!
Still, I manage to get my hello kitty, not perfect but
it is still cute. Nobody can get a perfect job  I think.
Hope that she doesn't mind the some of the imperfections!


I am thinking so hard what to do with the top layers so that it looks special and nice.
Suddenly the basket weave appears it my mind, I know it hard to get it perfect on
a round cake, but let me give it a try with my new wilton piping tips ^^

The nice consistency of my ganache make the piping went on smoothly,
almost perfect and it looks shinny! 
I know the borders looks  a it irregular,
but come on it hard to rotate and pipe at the same time without your hand shaking :p

Hope that Emma will like the design of this cake, positive feedback for me please :)

Baked Mini OREO Cheesecake


Always wanted to try on this oreo cheesecake, using oreo biscuits as the base with cream cheese oreo filling.

I also pipe on some whipped cream and decorate with the mini oreo, looks so cute :P

This is actually a 6 inch cake, so every slice is quite small :)

I pretty much happy with the look.
But the cream cheese is too strong until I can barely taste the oreo.
Might adjust the recipe for next time trial.


Orange Pork Ribs

Its time to try something different, and I saw lots of HONGKONG DRAMA love a dish like steak/chicken/pork go
with orange, just like sweet and sour pork or lemon chicken, just that we replace it with orange this time :)
And I also saw people posting some of the orange style dish in facebook,
so I was like why don't I give it a try kekekeke
Orange in savoury dish, how would it taste like????
I guess just a hint of orange and fruity flavour in the dish, 
that would be a great combination !

This ia actually a simple dish, despite you have to do some deep frying,
the rest just give it some thought and idea of what you
gonna use in the dish plus the garnish,
everyone can make this dish perfectly :)

From the supermarket, I got some oranges, capsicums, cucumber,
onion, pork ribs, eggs and flour.
These are basic ones, you can replace pork ribs with beef/chicken/pork,
its up to you, this dish goes perfectly with any kind meat!

First, I will get some orange juice squeezed first,
its better to use the fresh one, as in this way
you can get strong orange flavour :)

I also use 1 orange zest, the will release more orange flavour.

You will know the power of orange zest, its just so useful
and strong when you are using this in your dish.

Then, get the orange juice squeezed into a jar.
I am using around 250-300 ml of fresh orange juice.
Strain the juice first before further step.
Then mix the orange zest, juice together with
1 teaspoon of salt and 3 tablespoons of sugar.
Get all of the cutting done,
remember to reserve some cucumber slices and orange slices
for you plating and garnish :)

Then proceed to the marinating of the pork ribs.
Use some salt, pepper, sugar, soy sauce and
dark soy sauce.

Just roughly rub the pork ribs until its all covered with
the sauce, you will see it slightly darker in colour because
of the soy sauce.
Cover it with cling wrap and leave it for 1-2 hours.

Start the crumbing process!
Get ready eggs beaten +  plain flour with some salt mixed together.

This time I only dip the ribs in beaten eggs then
cover it with flour.
Ready to go for deep-frying.

Deep fry it in hot oil until golden brown in colour.
Leave it aside and get ready for the stir fry.

In a hot pan, heat up some oil.
Sauteed the onion first for 1-2 minutes.
Then add in the capsicum and stir fry for 2 minutes.
Add in some seasoning like salt and pepper to taste. 

Then lastly the cucumber, go on stir frying for another 1 minute.

Turn into high heat, pour in the juice.
Let the juice to boil, add more sugar or salt to taste if necessary.

Then, get some cornflour water, mix it into the  sauce to get the sauce thicken.
Stir in the pork ribs and stir until all of them covered with the sauce.
Finally, get  them on your favourite plate, put on any
garnish for plating or decorations if you feel like doing so.
Hmm, go and try this dish and tell me how does it go ^^

Onde Onde (Pandan Glutinous Ball with Palm Sugar Filling)

Tonight I am making my hubby's favourite dessert again, well actually he asks for it hehe :)
The ONDE ONDE, which is glutinous ball with pandan flavour,
filled with palm sugar (gula melaka) and coated with desiccated coconut.

Look at the melting palm sugar in the centre.
This small treats is ideal for either summer or winter season,
great for afternoon tea, hang out party or after dinner dessert.

when you bite it is really
a nice treat for everyone, that's why my hubby can't resist it ^^
